Knit Night in America- Week 2

What great sweaters everyone is making! What a fun thing to see. It’s Thursday and that means #knitnightinAmerica! I am going to knit night and I am bringing my Lamar Ranch Cardigan to work on. As a treat for all I am bringing a freshly baked Zucchini Bread. What are you bringing to #knitnightinamerica

Recipe: Zucchini Bread

Makes: 2 loaves


  • 3 eggs
  • 2 cups sugar
  • 2 cups of shredded zucchini
  • 1 cup oil
  • 2 tsps. vanilla
  • 3 cups All-purpose flour
  • 1 tsp salt
  • 1 tsp soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg


  1. Preheat oven to 325 degrees.
  2. Grease two loaf pans
  3. In lage bowl, beat eggs until foamy
  4. Stir in sugar, zucchini, oil and vanilla
  5. Add remaining ingredients by hand, blend well
  6. Pour batter into prepared pans
  7. Bake for 50-60 minutes or until toothpick in center comes out clean
  8. Cool 10 minutes and remove from pan
