What great sweaters everyone is making! What a fun thing to see. It’s Thursday and that means #knitnightinAmerica! I am going to knit night and I am bringing my Lamar Ranch Cardigan to work on. As a treat for all I am bringing a freshly baked Zucchini Bread. What are you bringing to #knitnightinamerica
Recipe: Zucchini Bread
Makes: 2 loaves
Ingredients:
- 3 eggs
- 2 cups sugar
- 2 cups of shredded zucchini
- 1 cup oil
- 2 tsps. vanilla
- 3 cups All-purpose flour
- 1 tsp salt
- 1 tsp soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp nutmeg
Instructions:
- Preheat oven to 325 degrees.
- Grease two loaf pans
- In lage bowl, beat eggs until foamy
- Stir in sugar, zucchini, oil and vanilla
- Add remaining ingredients by hand, blend well
- Pour batter into prepared pans
- Bake for 50-60 minutes or until toothpick in center comes out clean
- Cool 10 minutes and remove from pan
- Bring to knit night.
