Every Sunday my Father comes for Dinner. I pull out all the stops and cook his favourite foods – and quite often my own favourites! Tonight’s Dinner is Baked Ham with Potatoes Au Gratin and fresh green beans. Dessert is Cupcakes.
I think that tonight’s dessert would be perfect for Thursday Knit Night as well!
Old Fashioned Boiled Raisin Spice Cupcakes with Brown Sugar Icing
Line 12 cup muffin tin with paper liners – pre-heat over to 375 Fahrenheit.
1 1/2 cup raisins – cover with water and boil for about 20 min and let cool – keep 1/2 cup of liquid for cake batter. (sometimes I need to add a little moisture to the remaining liquid)
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp ground clove
Sift above ingredients together
- 1/4 cup soft butter
- 3/4 cup sugar
Beat together until white and creamy looking
- 1 egg
Add egg and beat well
Alternating from 1/2 of raisin liquid to 1/2 of flour mixture to 1/2 of raisin liquid to 1/2 of flour mixture and then add all of the raisins – add in above order to butter mixture. stir until mixed together.
Divide amongst the muffin cups.
Bake in 375 degree over for 20 to 25 min.
Cool 10 min in tin. Remove from tin and cool on rack.
Once cool Ice with Brown Sugar Icing.
- 2 tbsp. brown sugar
- 2/3 cup icing sugar
- 2 tbsp. butter
- 1 tbsp. milk
- 1/2 tsp vanilla extract
Beat together in a bowl and ice cupcakes. Icing will be crunchy.
